Packed with flavor, this sausage and beef chili is perfect for cozy days! Filled with spicy Italian sausage, ground beef, veggies, beans and beer, it's hard to beat. And it freezes beautifully. Dairy costless and gluten free options included.

Over the last few years, I have been searching for a chili recipe that both my husband and I would love.

I can't fifty-fifty count how many different versions I accept tried, from vegetarian chili to regular beef chili and everything in between.  Seriously – we've gone through a lot.

Just none was ever quite right and one of united states would end upwards not really enjoying information technology.

Subsequently each batch, I would always say that was it – I was giving upwards on chili – maybe information technology was something we just didn't similar.

Despite what I said, I've always had it in the back of my mind.  I couldn't get over it.

The perfectionist in me knew that at that place had to be a version that nosotros both would want to brand again.

This chili was a concluding ditch effort.  And funny enough, nosotros loved information technology.

I recall the key here is the spicy Italian sausage – it added simply the right amount of kick to this chili.  Not also much, but non too little either.

We also loved that this version is full of various beans, some veggies, and the beer doesn't hurt either.  It gives it that extra layer of flavor.

Serve this chili forth with some honey corn bread muffins and you've got one heck of a meal.

I should too mention that this freezes incredibly well – I pulled another container out of my freezer to thaw out this week.  We're excited to accept it again for luncheon very before long.

Ingredients

For the chili:

  • 2 tablespoons olive oil
  • ane large onion, chopped
  • 1 medium yellowish bong pepper, chopped
  • 1 medium orangish bell pepper, chopped
  • iv cloves garlic, minced
  • i pound spicy Italian sausage, casings removed
  • ½ pound lean ground beef
  • iv tablespoons chili pulverization
  • 1 tablespoon basis cumin
  • 1 tablespoon stale oregano
  • 4 tablespoons love apple paste
  • 1 (12 ounce) canteen beer*
  • 3 (14 ounce) cans diced tomatoes
  • one (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, tuckered and rinsed
  • 1 (fifteen ounce) can pinto beans, tuckered and rinsed
  • salt and pepper, to gustation

Serving ideas:

  • shredded regular or dairy free cheese
  • plain greek yogurt or dairy free plainly yogurt (or cashew foam)
  • sliced avocado
  • chopped cilantro and / or green onions

Instructions

  1. Add the olive oil to a large stockpot or Dutch oven fix over medium loftier heat. When hot, add in the onion and peppers. Cook, stirring occasionally, for about 5 minutes, until soft. Add together in the garlic and melt for about 30 seconds, until just fragrant.
  2. Next, add in the sausage and beefiness. Use a wooden spoon to interruption up the meat into smaller pieces as it cooks. Melt until browned and cooked through.
  3. Add in the chili powder, cumin and oregano. Cook, stirring occasionally, for virtually 2 minutes.
  4. Next, stir in the tomato paste. Add in the beer and employ a wooden spoon to scrape upwards whatever browned bits from the bottom of the pan. Allow the beer to come to a simmer so add in the diced tomatoes (with all the liquid) and the iii types of beans.

Notes

*To keep this gluten free - use a gluten complimentary beer or substitute with broth.

To go along this dairy complimentary - be certain to utilise a dairy free beer (and serve with appropriate toppings).

**Later the ii hours, I turned the heat all the way downwardly to low and immune information technology to go for another hr (since nosotros weren't fix to eat).
